From looking at Epson's documentation for the S1C33E07 chipset, it looks like it may be possible to display 4-level or 16-level grayscale by putting the screen in 2-bits per pixel mode or 4-bits per pixel mode. The chip itself takes care of driving the LCD screen appropriately. See [1] and [2]. Given that full-screen display is probably required anyway, this sounds like a very intriguing possibility.
